Engineered for efficient and large capacity production, a Scott Mixers Sauce and Dressing System will be the centerpiece of your operation. At the core of this system is the Scott Mixers Hydraulic RAM mixer, integrated with one or more processing vessels, an operator platform, and controls to seamlessly combine raw material staging with batch production. operation.

Top Applications:

  • Salad dressings
  • Sauces
Learn More

Mixing isn’t the only challenge processors face in sauce production.  Bulk material handling and raw ingredient staging can pose many challenges for the safe handling and addition to a mix tank.  Tomato paste, used in many sauce-based formulations, presents not only a challenging mixing application, but due to its paste like nature that resists flowing, is difficult to add to the mix tank.  For large scale production, a Scott Mixers Tote Slurry System has a fully automated lifting/dumping mechanism that lifts full totes in place and safely dumps the paste contents into a high-powered mixer for rapid processing.

Top Applications:

  • Tomato based sauce production

High-Shear Inline Mixer Options

When processing large volumes or running continuous operations, a high-shear inline mixer is often the most efficient approach. Scott Mixers manufactures inline mixers that install directly as a re-circulation tool to improve mixing quality or directly in a process line to smooth out the product in single pass, providing focused, high-shear mixing in a compact footprint.

Our High-Shear Pump (HSP) model handles inline blending, product smoothing, and de-agglomeration with a self-pumping rotor/stator design that eliminates the need for a separate process pump. The High-Shear Mill (HSM) model delivers higher energy input for wet milling and fine emulsion production. For powder-into-liquid applications, the Vacu-Blend system generates a strong vacuum to pull powders into the liquid stream lump-free, reducing batch times by up to 90%. The CDM (Continuous Dispersion Mixer) pairs metered powder and liquid feeds with a high-shear mixing head to enable true continuous dispersion without the plugging and air entrainment problems common in traditional inline setups.

Frequently Asked Questions

What is the difference between a batch mixer and a high-shear inline mixer?

A batch mixer processes a set volume of ingredients inside a vessel for a specified period, drawing product from the top and bottom simultaneously and rapidly dispersing product through the tank, ensuring an evenly sheared and dispersed product. Vessels or mixers can move quickly from batch to batch, producing consistent results. A high-shear inline mixer processes material continuously as it flows through a compact mixing chamber installed in the process line. Inline mixers are ideal for adding to an existing process line.  Scott Mixers offers both configurations and can recommend the right approach based on your batch size, viscosity, and throughput requirements.

Can high-shear mixers handle powder ingredients that clump or form fisheyes?

Yes. Agglomeration is one of the primary challenges high-shear mixers are designed to solve. Dry ingredients like gum thickeners, cellulose derivatives, and carbomers tend to form lumps when added to a liquid with standard agitators. Scott Mixers’ heads force all material through the high-shear zone, breaking down agglomerates and ensuring lump-free, fully hydrated dispersions. Our mixers are specifically engineered for difficult-to-wet powders.

How do I scale up from lab testing to full production?

Scott Mixers’ laboratory high-shear mixers use geometrically correct mixing heads that match our production hydraulic rams and top/bottom mount mixer models. This means results achieved at benchtop or pilot scale translate directly to larger equipment. Our application engineers work with you throughout the scale-up process to ensure vessel geometry, mixer speed, and system configuration deliver consistent results at full production volumes.
