Use EBARA Mixers to create these products by mixing powdered ingredients such as stabilizers, thickening agents, seasonings, preservatives with a mayo base. Oil is then added to form an emulsion. Mixing is continued until ingredients are incorporated and dispersed into a high viscosity, smooth, and agglomerate-free dressing or dip. Our mixers can handle various viscosity levels and prevent separation.

Mayonnaise (Mayo), is a thick cold sauce or dressing made from a mixture of oil, egg yolk, an acid (either vinegar or lemon juice), and additional seasonings.  Containing up to 80% oil, the preparation of the premix and subsequent emulsification of the oil and water is a difficult process without the right mixing equipment.

Low fat and/or egg-free ‘Mayo’ alternatives will contain difficult to mix gums and thickeners to build viscosity, enhance flavor, and provide product stability.  Scott Mixers offers Batch In-tank High Shear Mixers to effectively wet out and hydrate these ingredients, in addition to being able to turn over these viscous products without the need for additional low-speed mixers.

BBQ sauce is used as a marinade, basting, condiment, or topping for meat cooked on the BBQ.  Ingredients vary, but most include vinegar, tomato paste as a base, as well as liquid smoke, onion powder, various spices, and sweeteners such as sugar or molasses.

Making BBQ sauce is a two-step process:

The mixing of highly viscous tomato paste with water is a challenging process that can easily become the bottleneck of your process.  Scott Mixers offers mixing solutions that rapidly and safely accomplish this difficult step in your production.

A brine mixture often blended with sugars and spices is heated and mixed together with the diluted tomato paste to produce the final product.  Scott Mixers offers mixing solutions that rapidly incorporate and disperse dry ingredient additions and will rapidly blend together the liquid phases to produce a consistent and high-quality sauce.

Yogurt requires careful control of raw materials, processing conditions, and equipment. Quality milk must be used, and powder or concentrates need to be precisely added to ensure proper consistency and flavor. We provide the process solution that ensures complete dispersion and hydration when needed.

Hummus is a dip, spread, or savory dish made from cooked, mashed chickpeas blended with tahini, lemon juice, and garlic.  Traditional processing involves the ‘cooking’ of soaked chickpeas until soft, immediately followed by low speed mixing with the other ingredients when the skins are tender and can break down more readily.  If not processed immediately, the chickpea mash thickens up considerably making further processing a challenge.  Our Scott Mixers Hydraulic Ram mixer easily provides rapid tank turnover for blending, with shearing action required for skin breakdown and product smoothing.

Smooth mustard is made by dispersing mustard flour and other ingredients into water, or a mixture of water and vinegar, then mixing until homogeneous. Ingredients like sugar and salt, flavorings like honey, herbs, spices, and coloring such as turmeric are added. When dispersing mustard flour into water/vinegar, agglomerates can easily form.

    • The Scott Mixers Turbo Dixie Mixer can mix powdered ingredients and solids into highly viscous liquids, even as thick as peanut butter. It is ideal for preparing pre-mixes and pre-emulsions for mayonnaise and other dressings before further downstream processing.
